Transitions are always difficult. Whether it’s a new school, a new job, or a new house they can all be fraught with difficulties and can be some of the most stressful times there are.
However!
There is often an upside as these challenges can bring opportunities you would not have been exposed to otherwise. Which brings me on to today’s blog post subject. A giveaway! To say thank you for your patience as I’ve made the transition from Jo Blogs to Every Nook & Cranny, I’ve arranged a little giveaway to get us started and I hope to bring you more as time goes by. I have a feeling today’s little prize is going to be met with whoops and squeals of joy!
That’s right – in conjunction with the marvellous KitchenCraft, I am giving away a top quality, heavy duty and extremely elusive friand pan from their Masterclass range. A much coveted piece in the UK, it’s almost impossible to source a tin version and often you have to make do with a silicone mold which never quite produce the best bake unfortunately. It took me a long time to source myself one and it was very pricey (they still retail at around £15-20 per tin) but as I am a true friand devotee, I coughed up the cash and got baking! If you’ve never had a friand before let me tell you they are a sweet little cake made with ground nuts, icing sugar and egg whites and they are delicious. The texture is something else and you can play around with a basic recipe, hampered only by your imagination. I’ll get you started with a few of my recipes, found at the bottom of this post.

Mmmm, the rhubarb and custard friands are going to have to be made! I have rhubarb ripening in the garden, unless hubby picked it all yesterday.
I’ve been meaning to try friends ever since I tried the Mary Berry version that my friend baked for her baby shower – this would be the perfect excuse to bake some! Fingers crossed & loving the new blog Jo! x

I have to admit to not having a clue what a Friand was until reading your post but they do sound delicious. I had a little google around for more recipes and there seem to be lots of options but my favourite has to be blueberry and lemon.
I’m on a bit of a mission to introduce the UK to friands! They are superb little cakes 🙂

Ahhh I discovered friands a few months ago and I absolutely LOVE them! I made some mojito flavour ones for a summer do a few weeks ago – so good! The best part is having loads of leftover egg yolks and feeling obliged to make custard with them 😉
